IRISH SODA BREAD

2-1/2 cups flour
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
currents (optional)
1 cup raisins
1 tsp caraway seeds
1/4 cup butter (room temp)
1/2 cup sugar
1 egg slightly beaten
1-1/2 cups buttermilk (room temp)
1 cup cranberries (optional)

Sift together flour, baking powder, salt, soda and set aside.

Cream butter, sugar, slightly beaten eggs and buttermilk.

Blend well, add dry ingredients to liquid ingredients and mix by hand, till well moistened. Fold in raisins, caraway seeds and currents.

Pour into greased 1-1/2 quart glass casserole. I use iron fry pan, grease and flour it (double recipe when using iron pan). 5 minutes before taking out butter top with melted butter and sprinkle with sugar. (I use cinnamon also)

Bake in preheated oven at 375F - 1/2 hour and reduce to 325F for 1/2 hour.

Bread is cooked when knife comes out clean.
